It’s Monday, the day that a lot of people don’t feel like stepping out of their bed. However, when you know that a delicious breakfast is waiting for you, it becomes a lot less difficult. This Sweet Potato and Cinnamon Parfait is sweet and delicious to start your awesome week!
In my last post with my favourite things of 2015 I told you about how much I love the combination of sweet potatoes with cinnamon. I also promised you to share a recipe with you, so I went to the kitchen, got myself some of my favourite ingredients(yes, apples again!) and I created this delicious parfait. So get these beautiful ingredients and let’s get cooking!
- 1 sweet potato
- 1 ripe banana
- 3/4 apple
- 1/2 teaspoon vanilla powder
- 1 teaspoon cinnamon
Start by taking off the skin of the sweet potato and cut it in small pieces. Steam the sweet potato until they are soft enough to mash. Now mash the sweet potato and mix in the cinnamon.
While the sweet potato pieces are heating up, mash the banana and mix in the vanilla powder. Put this mixture in the fridge to make sure that it doesn’t get brown quickly. Now peel the apple and cut it into very small cubes.
Now take a glass and start layering. Start with a layer of the sweet potato, than the banana mixture and finally the apple cubes. Use for every layer half of the ingredients, so you can make six layers.
You can make one large parfait or get creative and make some small ones to share with your family.
The last weeks have been very busy and there are still a few busy weeks to come. I can’t wait to have some more time to make some delicious food, take pictures and write more often again. In a few months school is over, so that means a lot of time to get creative again!
