Grilled Carrots with Lemon Juice and Parsley

I love raw carrots, and cooked ones are great two, but these grilled carrot’s texture is just in between the raw and cooked one. It’s still nice and crunchy mixed with a bit of a sweetness and a soft texture. However we can’t forget the lemon juice and parsley dressing, because it’s like the cherry on the cake. 

Ingredients:

  • 1 carrot
  • 1 tsp fresh parsley
  • 1 tsp lemon juice

Directions:

Wash your carrot very well, or take off the skin. Trim off the front and back and cut the carrot in half (lengthwise). When you have the two long sides of the carrot cut these in half to (also lengthwise). Now cut the carrot strips into 3 or 4 pieces. Take a grill pan and grill the carrots on both sides until you start seeing the grill marks.

In a separate bowl mix the lemon juice and cut up parsley and mix it together. Let it sit for a bit so the flavours get combined. When the carrots are ready put them in the bowl and mix well with the dressing.

Serve on a plate and enjoy!

Everything that is orange does remember me of fall, there for I have been eating a lot of carrots lately. But honestly I CAN’T WAIT FOR THE PERSIMMONS! Persimmons are one of my favourite fruits and the best fall food if you ask me. Unfortunately I haven’t seen them at the market yet, but I can’t wait to take the first bite!
