Apple and cinnamon Cake Roll

I always loved the way cake rolls were presented, they looked so pretty but impossible to make. Honestly it isn’t as difficult as you would think it is. Most cake rolls have this strawberry jam layer inside of them, but today I decided to make a apple and cinnamon cake roll , my favourite combination for upcoming fall.

Ingredients:

Cake

  • 1 banana
  • 1 + 1-2 tbsp flour of choice
  • 1 tbsp non dairy milk of choice
  • 1/4 – 1/2 tsp baking soda
  • 1-2 teaspoon cinnamon

Filling

  • 1 banana
  • 1/2 apple
  • (optional) cinnamon

Directions:

Mash your banana into a mixing bowl, add the non-dairy milk and mix well. In another bowl, mix the baking soda, cinnamon and flour together. Mix the dry and wet ingredients together and pour the mixture into a microwavable tray. Mine was 13 x 13 cm. Microwave for about 3 minutes and flip it on a towel.

Now roll the cake together with the towel and let it rest/cool down for a few mintes. In the meantime you can make the filling.

Just mash your banana and grate 1/2 of your apple. Mix the two together and add cinnamon if you want.

Now carefully roll out the cake, take out the towel and spread some of the filling on the cake. Now roll the cake in place again and put it on a plate. Add some leftover filling on top of the cake roll and add some apple cubes if you want.

Lately I feel that some of my blog post aren’t so great. I am not very proud of some of my blogpost, probably because I know that if I spend more time on them,  post, pictures and most of all the recipes would be a lot better and creative. So for September my goal will be to create better recipes and post that are a lot more creative and professional.
