Quinoa is one of my favourite things to cook, because you can have it with everything. Sweet or savoury, cold or hot no matter what, it tastes amazing. Sweet and fruity recipes are my favourite, so today I made a sweet quinoa breakfast.
Yesterday my mother’s niece gave me 2 kilos of quinoa, which is crazy! Her husband grows quinoa for his job and brought some home, but they didn’t like it as much as they had hoped. Because they know that I am a huge health food freak, they gave it to me. I got so excited and couldn’t wait to create a delicious recipe with some of the quinoa.
- 1/2 ripe banana
- 1 apple
- 1/8-1/4 tsp cinnamon
- 1 cup cooked quinoa
In a mixing bowl mash the banana and mix in the quinoa and cinnamon. Take half of your apple and cut it into small cubes. Add the cubes into the quinoa mixture and mix again.
Peal the left over half of your apple and cut out a few thin slices, which you now can cut into strips. Put the quinoa mixture into a nice bowl and place the apple strips on top like a real apple pie. For garnishing you can add 2 slices of a banana or something else of your choice.
The holiday goes by so fast, only three weeks left and the school starts again :(. Which means that I only have three weeks left to create awesome breakfasts and lunches and have all the time to do amazing things.
